Harissa
Ingredients:
Makes one cup
8 chilis
4 garlic cloves, crushed
1 tsp salt
2 tsp caraway seeds
1 tsp coriander seeds
1 tsp cumin seeds
A large bunch o mint, chopped
1/2 cup olive oil

Harissa is a fiery hot spice condiment used in norther african cuisine. It will keep as long as the mixture is covered in oil and refrigerated.
1. Chop the chilis, garlic, and salt together to form paste.
2. Transfer them to a bowl.
3. Grind the spices together.
4. Add the spices to the chili mixture with the chopped mint.
5. Whisk in the olive oil.
6. Pour into a jar or bottle, seal, and refrigerate until needed- leave for a day if possible to allow the flavor and heat to develop.
